Jamaican Stew

2 tsp. olive oil
1 clove garlic, minced
1/2 cup chopped onion
1 1/2 cups chicken broth
1 cup chopped red pepper
1 tsp grated fresh ginger
1/2 tsp salt
1 small can diced green chilies
1 can diced tomatoes
4 cups cubed(1/2 inch) sweet potato
1/2 cup water
1 can black beans, rinsed and drained
1/2 tsp cumin
1/4 tsp pepper

Stir in right before serving:
3 Tbsp peanut butter

Serve with:
chopped dry roasted peanuts
lime wedges

Heat oil in skillet, saute onion and garlic. Mix with remaining ingredients. Bring to a boil and simmer for 45 minutes or cook in crockpot for 8 hours on low.

I like to throw in some cooked chicken as well. This is one of our favorite soups!
