The Best Zuchinni Bread

3 eggs
1/2 cup olive oil
1/2 cup applesauce
1 cup white sugar
1 cup brown sugar
3 cups grated zucchini
1 tsp vanilla
2 tsp maple extract
2 cups white flour
1 cup wheat flour
3 tsp. ground cinnamon
1/2 tsp nutmeg
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1/2 cup chopped nuts

Topping:
1/2 cup brown sugar
1/4 cup flour
2 Tbsp butter
1 tsp cinnamon
1/2 cup chopped walnuts
3/4 cup oatmeal

Preheat oven to 325*. Grease and flour 2 loaf pans.
In large bowl, beat eggs until light and fluffy. Mix in oil, applesauce and sugars. Stir in zucchini, vanilla and maple. Combine remaining ingredients and stir in egg mixture. Divide into prepared pans.
Combine topping ingredients and spread over the top of the loaves.
Bake for 60-70 min. or until done!
